The seals
D.O.P. (Protected Designation of Origin) means every step happens in one defined region. I.G.P. (Protected Geographical Indication) means at least one key step happens in the named place.
Extra virgin olive oil
Pressed by mechanical means only, with acidity of 0.8% or less and no flavor defects.
Balsamic of Modena
The more seals, the longer it has mellowed, and the thicker and sweeter it pours.
Gragnano pasta
Bronze-cut and slowly dried, for a rough surface that holds sauce.
Carnaroli rice
